I chanced upon this idea while at redman. I had some leftover cheese in the fridge, so I bought pau mix, instant yeast, and a rolling pin.
Start by adding pau mix, 5g instant yeast, and 230cc water into a mixing bowl..
Knead for 5 minutes till slightly elastic and does not stick to hand.
Divide into 40-60g portions and roll into rounds..
Place on tray and allow to rest, covered with a damp cloth, for 10 minutes.

You may get your tabletop ready to roll out the dough.

After 10 minutes, uncover cloth and roll the rounds flat one by one, filling it with the sliced cheese mini triangles. Roll in back into rounds again.
I think you could fill it up with just about anything. Maybe next time can try lotus paste or red bean (which I have in my fridge).

Cover with the same damp cloth and leave to rest for 30-45 minutes.
Steam for 10 minutes.
Here are the pau oozing cheese..
