Tapioca cake

Recipe from “Steamed sweet indulgence” by Chris Ng

I tweaked it a bit.

430g grated tapioca, I think a fine grater is better

260g thick coconut milk

50g melted unsalted butter

1 tsp salt

180g sugar

4 tbsp tapioca flour

60g water

1 piece banana leaf (to line the cake tin)

combine all the ingredients first, except for the grated tapioca

grate the tapioca

mix it into the mixture

oil the bottom of the cake tin and line it with banana leaf

steam at high heat for 40 minutes

cool down for 4 hours in the cake tin

remove cake using spatula and peel off banana leaf

cut into rectangular blocks and roll in grated coconut

ta da!
